Is it custard? Is it pudding? Who cares – it’s all chocolatey greatness!

2 cups (500ml) 35% cream1 cup (250ml) milk1 teaspoon vanilla extract150g dark chocolate
2 whole eggs3 egg yolks1⁄2 cup (110g) sugar

Preheat oven to300oF.
Pour the cream, milk, vanilla and chocolate into a saucepan over high heat stirring to melt the chocolate. Cook until the mixture just comes to a boil. Remove from heat and set aside.Place the eggs, yolks and sugar in a bowl and whisk until combined. Gradually add the hot cream mixture to the egg mixture, whisking to combine. Pour into 6 x 1 cup-capacity (250ml) ramekins. Place ramekins into a water bath. Bake for 45 minutes or until set. Remove from the water bath and allow to stand for 15 minutes before serving. Serves 6.
